Wine went bad in less than a year. I made the kit in 2017. Then I kept several bottles to see if I was impatient and nope it still tasted off (just tried them 3/29/20 before I dumped the rest) Went to acid. Washed all my equipment and bottles (new) with one-step. (Rinsed well too, obviously). Store them in my cool basement. So although it could be my fault, I did every step per the book and then some.I can’t tell you how disappointed I was with this spoiled pricey birthday present. I LOVE the bang for you buck wines from Barossa (Schild, Penfolds, etc) so I have to admit I had high hopes. But I at least expected the wine to be drinkable. To be fair it did have that good peppery taste when I tested some bottles a few weeks after bottling. But never had a good aftertaste (not smooth like many Barossa wines). And then it went to acid I would say in about 6-9 months.Spend you money elsewhere. Or just buy wine on sale, much less disheartening than making bad wine to share. At least the labels were cool.
